Pita with eggplant & Just Fucking Good Wine Rosé

Pita-met-aubergine-Just-Fucking-Good-Wine-Rose

Ingredients (serves 4):
4 pita sandwiches
2 aubergines

For the Sesame Sauce:
4 tablespoons tahini (sesame paste)
1.5 tablespoons of lemon juice
1 clove of fresh garlic

Stir into the tahini, lemon juice and garlic. The sauce should run off the spoon. If it doesn't, stir in some water. Season with salt and pepper. Set aside.

For the vegetable filling:
2-3 ripe tomatoes, de-seeded
½ cucumber, de-seeded

2 spring onions, thinly sliced, white only
1 tablespoon flat parsley, finely chopped
1 tablespoon of lemon juice
1 tablespoon of olive oil

Cut the tomato and cucumber into small cubes and the spring onion into rings. Finely chop the parsley. Mix everything together and season with lemon juice, olive oil, salt and pepper. Set aside.

For the Mango Sauce:
2 tablespoons of mango chutney
1 pinch of ground coriander
1 pinch of ground cumin
1 pinch of turmeric
½ red pepper, finely chopped

Mix the mango chutney with coriander, cumin, turmeric and the red pepper. Season with salt. Set aside.

Cut the aubergine into 1 cm slices. Sprinkle with salt and set aside for 10 minutes. Pat the aubergine slices dry and fry them brown at 180 ºC. Drain on kitchen paper.
Toast the pita bread in the toaster. Cut them carefully and push them open so that you get a kind of bag. Spread the inside of the rolls with some of the sesame sauce. Hold the pita bread in the flat of your hand and cover one inside with slices of eggplant. Fill the rest with the vegetables. Divide another tablespoon of sesame sauce and a tablespoon of mango sauce on top of the filled pita. More or less to taste.

Pairing:
The pita filling of crunchy raw vegetables and soft, fried aubergine is full and rich in flavor, thanks also to the tahin and mango sauce. Full and rich is the wine with light red fruit such as strawberry and sweet plum, with structure and juicy fresh acidity. In short: well balanced. With its power and pleasant sweet and sour balance, a good combination with the spicy pita bread.
